Creamy Salmon Spaghetti with Semi Dried Tomatoes

INGREDIENTS:

High fiber spaghetti – 160 grams

Salmon steak (no skin) – 200 grams 

Light cream – 4 tablespoon 

Semi dried tomatoes – 120 grams

Thyme – 4 sprigs

Parsley – 2 sprig

Salt and pepper

Hot water

COOKING INSTRUCTIONS:

  1. In a pot, sprinkle salt and bring water to boil. Put spaghetti in and cook for 10-12 minutes or until al dente. Drain and set aside.
  2. To poach the salmon, season fillet with a layer of salt and pepper and place in a sauce pan with 1.5 cups of boiling water. Simmer for 3 minutes with lid on.
  3. Remove lid and flip the fillet around to simmer for another 5 minutes.
  4. Flake salmon fillet in the pan and add spaghetti, semi dried tomatoes, light cream, thyme, parsley and salt & pepper. Cook on very low heat for 1-2 minutes stirring consistently. Serve!
